Caymus Vineyards Cabernet Sauvignon 2007 Special Selection Napa Valley
Deep ruby with purple rim.
Medium to pronounced nose. The deep and lower tone style nose includes vanilla, grass, black berry jam, chocolate, violet, butter toast, mint. Not an ebullient style, quite elegant. Shows some smoky incense note and caramel. After 1.5 hours, brilliant and attractive rose, and the vanilla and chocolate noses are denser.
Medium to full body. High tannin, very very young. Raspberry and black berry. Rose and vanilla. A little bit spicy. Coffee. Dense palate and lingering.
Caymus Vineyards Cabernet Sauvignon 2006 Napa valley
Medium nose. Wet soil, violet, vanilla, leather, light black berry jam. Quite similar style to the 2007 vintage, but the nose of this one is not so concentrated as 2007 vintage. After breathing, shows sweet chocolate and denser vanilla note.
Medium to full body. Black berry jam, green pepper, vanilla, chocolate and light black tea. Medium acidity and tannin (not fully matured).
Silver Oak Cabernet Sauvignon 2004 Napa valley
Medium nose. Light butter, black berry, wood, cinnamon. Sufficient breathing brings out light hints of brown sugar, honey and tangerine.
Medium body with not fully matured medium tannin. Coffee, chocolate, black cherry and light pickled squash go with medium tangerine flavor acidity. The length is medium+ with a bitterness hint of mandarin medicines.
Silver Oak Cabernet Sauvignon 2005 Alexander Valley
Alexander Valley is in the north part of Sonoma county.
Medium garnet with light ruby rim.
Medium nose. Chocolate, black berry, green pepper, and hints of ripe orange, vegetables, light bouquet and plastic glue.
Medium body with not fully matured medium tannin. The palate begins with black berry and then shows vegetable notes. The length is medium with licorice note.
Janzen Cabernet Sauvignon 2004 To Kalon Vineyard Napa Valley
To Kalon Vineyard is one of the earliest regions planting Cabernet Sauvignon in California, and it also one of the regions that produce many cult cab. Many single variety, Cabernet Sauvignon, are full body and also keep the silky mouthfeel, due to the clay loam soil which drains quickly and keeps less nutrients. This characteristics also grabs Rober Parker’s attention, so that many wines here get high rated scores from Rober Parker.
Medium nose. Black cherry, chocolate and vanilla, and hints of barrel and bouquet. Shows mint, green pepper and leather after breathing. And more vanilla and bouquet after more breathing, however, not as dense as Chappellet C.S. 2007 Pritchard Hill.
Medium body with matured medium tannin. Black cherry, green pepper, chocolate. Medium+ acidity. Orange and licorice notes at the end.
Chappellet Cabernet Sauvignon 2007 Pritchard Hill
Pritchard Hill is at the eastern side of St. Helena, quite close to main vineyard regions of Napa Valley and Sonoma County.
Medium+ nose. Black cherry jam, rose, violet, black pepper and vanilla. After breathing, the rose nose is denser and more ebullient. Lovely~ 😀 (If picky to choose some short-coming, the palate is not as strong as the nose.)
Medium+ body. The high tannin is not matured, I think it needs 3 more years. Black berry jam, cinnamon, and vanilla. The medium+ acidity and rose note go with the lingering length. Very good, this one and the first Caymus 2007 Special Selection are both my favorite (but toooooo expensive T_T )
