繼之前開瓶喝過一兩次之後，就好一陣子沒動，最近拿出來把剩下的半瓶分幾次喝掉，順便來寫一下詳細一點的 tasting notes。
I opened this bottle a few months ago, but only had a few glasses of this great Cabernet Sauvignon, then kept it till now. In these days, I took the left half bottle out again and served myself, and wrote down some notes as tasting records.
Drinking too much is not good to your healthy, and you can not drink unless you are adult.
At the time I just opened this red, I was surprised by its perfume-like aroma, so that I did not pay much attention to its other detail tastes and aromas. In these days, I decided to drink the left half bottle, and try to notice its details.
The aromas are majorly berry fruits (a little bit tart) and other spices while just serving. After swirling, some vanilla hints can be found. Before it fully wakes up, that tannins are not supple enough, and the palates are consistent with the aroma — majorly blue berries. Besides, a little bit chocolates and spicy. When it breathes, some tartness is aware and comes out from the glasses, and this tartness decreases and other aromas become more clear as time goes by. After breathing, the tannins are still slightly rough, but better than when it just be served.
Compare to the prior tasting experience a few months ago, the tannins become more smooth, the smell is more flavored and denser. If you find this wine on the shelf, I think you can buy it and keep for 3 to 5 years for better tasting experiences. 😀
